today is enchiladas
chicken and bean with mixed veggies
i got the beans up on the stove cooking now (dried navy beans this time)
i am planning on 32 enchiladas so that will be i think 8 containers of 4
now each container actually is a meal for both of us with his 'work supper' as well in there
i eat one, he eats two and takes one to work
i am hoping to stretch the chicken with the beans (shhhhhhhhh we won't tell him there are beans in there-what he doesn't know is good for him)
i may put some corn in too
in a few minutes i'll go make the sauce for this
right now i am still struggling with the morning fibro stiffness..... (and it's raining)
now yesterday i processed that pie pumpkin i baked the other day....i ended up giving the chickens the guts as i didn't like the way they looked but the girls were very happy
i made bernie a pumpkin crustless pie....i called it a custart.....hahahaha
he liked it but he said it needed whipped cream which we didn't have.....for once i would agree with him
i couldn't find the ground allspice and didn't feel like grinding the whole allspice so i just put cinnamon and ginger in it......it was pretty good
next i am hoping for a good sale on beef but if not then i am going to have to do with a mix of chicken/pork for meatloafs and such
and i am going to need to deal with that soon...... as i need to have stuff ready for when i am too ill to do anything
i am fighting this disease as hard as i can..... which isn't easy, as i hate being idle.... but i do have to sleep and rest and i can't do what i am used to doing in a day
i keep hoping i figure a way to at least do what i need to when i am better against the bad days..and figure ways to have the bad days not so bad
anyway....right now i am cooking for the freezer..... in a while when that's finished i'll paint

so this is pretty much me today..and the past few days.
bernie's got this now-.......well he is fighting it off now..... he of course didn't get anywhere near as ill as i was.
everything i do, i get the cold clammy sweats, i get super weak and have to sit for a while.....
he's still doing wood,
he told me YOU DON"T BRING THE WOOD IN
ok
believe me i can agree with that one
so today is the start of another marathon cooking session...but it'll have to be slowly done over a few days
this batch is as follows
- roasted chicken with leeks sauce
- tomato sauce
- baked ziti
- beef stew
- potatoe with leek soup
- chicken enchiladas (from the roasted chicken)
- split pea soup (just for me as he hates it)
- beef pot pies
- chicken and dumplins
i will roast the chicken, while that is roasting i'll do the veggies for everything else, and start the sauce.
i'll make the seasoned flour for the beef as well
and roast the potatoes tonight for not only our dinner but for the potato soup
tomorrow i'll make the ziti

and start browning the beef in the flour mix
sunday i'll shred up the chicken for the enchiladas and i'm going to add some really finely minced veggies to that too
and so on......
i love cooking this way, not only for us for the week but also for us for the freezer
i just hope my strength holds out
the doctor said this was viral......and checked me also for pneumonia
i can tell you that i feel like a damn zombie......the walking dead
only they don't have to cough as much

not quite balmy.......but we're warm! and tuesday lookback humor

we got a new back up kero heater.
i ordered it sunday online to be picked up at lowes
bernie ran to get it, we prepped it monday, and set it up yesterday
ran it a few hours in the living room- turned it off when we went to bed
wow
this morning the studio was 74...
the woodstove didn't have to work as hard
the birds water wasn't frozen
and it was actually warm
not florida in august warm.......more like PA in May warm
it's -4 this morning out side and windy!
we did do a few other things... covered the basement windows with plastic
etc
now i know it's been a few days since i posted, bernie and i have been rushing around working to make sure we get through this latest cold snap.
i cooked a lot of stuff ahead due to his schedule change and also ....with the cold snap we used to hear transformers exploding all over the mountain, and we'd lose power
so this way with the food already cooked, it's just fast to reheat on the woodstove
i finally was able to uv coat my digital prints to fill my order during a brief heat wave of 45 degrees
(i didn't open the etsy store yet but i am starting to get orders anyway! which shocked me!)
over the years we've acquired more and more emergency equipment and experience.
we've got oil lamps, and candles, flash lights ( i am really liking the 'headlamps)
water storage, food storage, back up heat
(for back up heat you need to have things that either don't need electric to heat you....or have a battery start.......so woodstove and kero heater for now.... and maybe adding a pellet or biomass stove in the front room for later)
and over the years i've also realized that having food cooked, and waiting helps too....
boy it sure helped us during the power outage of sandy! and we had that generator!
i found it takes a few days to get used to the 'new normal'
anyway.... we're warm, we're fed and we still have electric!
the other good news is that even with the really frigid temps plus windchill, the water buckets did not freeze.....
so i know that the birds are ok
although i am still a bit worried about the quail....but they have a LOT of hay, and each other
plus a lot of food so they should be fine
another thing i noticed is that the birds eat a LOT more during cold weather
i give the chickens extra stuff like suet or even chicken fat....
(they are omnivores and even cannibals so i don't feel bad about it as they will eat each other or a weaker chicken given half a chance - actually that whole 'vegetarian chicken feed' is not healthy for chickens, as they will and should eat bugs etc, it's natural and healthy for them)
i should probably figure something fatty for the ducks....but since i have muscovy and they don't actually have fat layers....relying instead on down to keep them warm,--- they too love their protein in the form of worms and bugs.... small mice, small birds..... reptiles etc..... they also love greens.... so they get some scraps from the kitchen too
we've been putting leftover cooking fats and stuff out for the wild birds and animals too
and luigi the button buck was back but i am hoping he's moved on now...
now with bernie's new schedule, and his location, he can stop at the provisioners to pick up the bulk chicken breasts when they are 1.65 a pound (not bad for boneless skinless, and not injected with saline either so you get what you paid for)-- i can call it in and it will be ready at the dock for him to just pay for and pick up
so are you folks staying warm? safe? i hope so
it's brutal weather out there
i know that the midwest and mountain regions are really in the deep freeze.... arctic type weather so you all stay safe

a week of meals....*** almost
bernie moves to his new schedule on wen.

i am going to root around in the freezer as i am pretty sure i have a chuck roast that is just begging to be a stew
and i am going to most likely roast a chicken as well......
possibly a turkey
and i sure need to bake soon...
i may also make him a few pizzas and freeze them already made and just ready to reheat
we'll see
now the weather is supposed to again take a nose dive
bernie was home last night so he baby sat the woodstove
today we got another back up kerosene heater...... this one for the front room- we did the prep today and will set it up most likely monday (maybe sunday if it seems it's going to go down to 0 or below then)
and we did some more work on the winterizing downstairs, since i found the water buckets in the duck room frozen
oh and one of the quail got out.... bernie was chasing it through the basement
and i know i shouldn't laugh but it cracked me up to watch that quail run
i cleaned the woodstove today as i have discovered that a coal bed makes for a very inefficient burn in there----
i am really longing for a new house now......all one floor and much more draft proof and energy efficient
i would like a few sources of heat too..... passive solar, geothermal, biomass........
and possibly if we are in an area for it...natural gas
i really would also like tankless water heaters
i would LOVE 14'' of insulation in the walls and maybe 3 feet in the ceiling!
i'm a bit tired of drafts now on my old bones
okey dokey now...
bernie's out of the shower, so i am going to feed him now....stuffed peppers!

before i forget......
first off i want to wish you all the very happiest of holiday seasons
then i want to tell you how to make one of my favorite cookies
(it makes a LOT..... either freeze half or use this as a holiday tray cookie)
i make the dough, and keep it in the fridge.....it keeps about a week in the fridge
it rarely lasts that long with bernie around
thoroughly cream 1 cup of sweet unsalted butter
use the high speed on the mixer
then add 8oz of cream cheese and thoroughly cream that with the butter
add 2 and 3/4 cups of white sugar... scrap down the sides of the bowl and keep that mixer going at high speed
add 4 duck eggs (or 5 jumbo chicken eggs) and beat that batter within an inch of it's life
add 1 tablespoon each of vanilla (remember when i told you how to make it?) and almond extract
and continue to beat it until it's fluffy and smooth and almost looks like frosting
meanwhile sift 5 and 1/2 cups of flour with 4 teaspoons cream of tartar, and 2 teaspoons of baking SODA...... mix this all up very well you can add some salt....maybe 1/8 teaspoon
then stir it into the wet ingredients.... be careful not to over mix.... you can use the mixer on low/med
and stop often to scrap the sides down
DO NOT OVER MIX THIS PART
chill for about an hour
drop by tablespoonfulls on a cookie sheet -
sprinkle some multi colored sanding sugar or sprinkles on the top
and bake between 10 and 14 mins at 350 degrees
until the edges are medium brown
let cool on the tray about 3 minutes then move them to a cooling rack
ok now the variations
you can add some ground cardamon to the dry ingredients
and or some lemon or orange zest
about a teaspoon measure
you can add chips to the finished dough (or part of the finished dough)
or nuts
or sprinkle chopped nuts on top
raisins soaked in liquid can be added to the dough before dropping on the cookie sheet
or cranraisins...... or sweetened dried cherries, or blueberries....crushed toffee.....
or bake without and then ice or glaze later
( i like lemon icing on these just FYI)
we do however make these all year round... they are not just for christmas.
now just a fast update on other stuff.....i have a layout on the board for a nest with quail....
we'll see how that goes
i have the quail in a better/larger/ more quail comfortable arrangement now in the basement, after doing research with google and also quail breeders here.. one got out and was flying around in the duck room but we got it back and they are both fine, nestled together in the alfalfa hay part of their new pen...they also have sand/oyster shell to dust themselves with, and i ground the pellets into crumble for them, and added some bird seed too..........
in knitting news i have about 40 inches of vine lace on that scarf i'm working on......it looks like i also have another 200 yards or so left of the skein so i am going to keep knitting.
bernie starts his new job tomorrow night..... he's met some of the guys when he brought his tool box up to the new shop.

painting updates, pantry notes *** pretty long pt 1 of many
i was up most of the night painting, i think it's starting to come along now. i am starting to like what i see here. however i will be cautious with my optimism, as i don't want to become so enraptured with this painting that i don't see if i make a mistake. it's good to keep a critical eye on your work.
this particular series will be larger in size then my original ones, and i think more intricate, reflective of where i am in my life now.
i do like the 'peeking into' aspect of this painting, a glimpse into a sheltered and secret world.
some of my favorite things are in this painting, maple leaves, wild berries, the nest and eggs.
this painting was extremely soft starting out, and still is mostly, but i think things are starting to sharpen up a bit, which they needed to.
now onto another thing that i was asked about recently...
starting and maintaining a home pantry without making yourself nuts. yes it can be a huge job but it's easy one step at a time.
our forefathers (really our foreMOTHERS) marked the rhythm of the seasons of an agricultural based year, taking things in plentiful and season and preserving them for times of want and winter.
for us, it is more a matter of making sure that if there is a hardship, such as illness or job loss...
or a storm, or money is tight, we can survive. despite the supermarkets all around us full of food and goods, sometimes they are beyond our grasp.
so i am going to try to help you put a pantry together if you don't have one, increase your pantry if you do have one, and try to help you save some money while you are doing it.
***please note that when i refer to our pantry it includes batch cooking freezer meals, dried foods, canned foods and homemade 'tv dinners'' part of our pantry, as during hurricane sandy (no running water and no electricity for over a week and then no hot water for another 2 weeks) the food i had already cooked ahead was what we reheated on the woodstove. it also includes extra amounts of things like coffee, tea, sugar, lightbulbs, toilet paper.....
first you need a plan.
and a notebook (i use a three ring binder- and i get a ream of prepunched holed paper for it)
ok, what do you eat during the week (please don't say 'take out every night'..or we will have to talk)
let's just say an average week
make a list of your suppers
here's mine for cold week in fall:
sunday- pasta and sauce (salad)
monday- meatloaf, baked potato, carrots (gravy optional)
tuesday- chicken stir fry with mixed veggies, brown rice
wednesday- porkchops in apple cider with homemade mac/cheese and home canned cole slaw (yes it stayed crisp
thursday- chicken soup with no knead bread
thursday- chicken soup with no knead bread
friday- homemade pizza
saturday- beef stew
summers are in a way, easier as we eat a lot of salads out of the garden, but we'll just do this normal type week.
what else does your family eat?
make a short list of favorite main dish meals
i have a list of about 60 different main dishes put away.......
now you know that you have to eat daily,
so decide for now, how many days or weeks you would like to have stocked for?
***i started out when we were first married (37 years ago) stocking monthly, we shopped once a month, i spend saturday cooking and then we ate for the month without worry....just picking up milk and maybe eggs or bread and some fresh veggies weekly (we lived in an apartment at that time and i worked full time outside of the house)
when we moved here, we started to stock up for 3 months at a time, but soon graduated to 6 months at a time....and finally to a year at a time.
let's say you want to stock for two weeks,
you know you need 14 meals, but say your family LOVES homemade pizza and you have that every friday night....ok so that really is only 13 meals (cause one is doubled)
and say you make a big roast on a sunday, then cut it up for stew, and the leftover stew is now going into a pot pie, ...hmmmmm see what i mean? (hint, cut the roast into stew chunks before you put it away on sunday, and it's ready to go for a fast stew during the week.)
now i know at this point in the process, i was sitting there overwhelmed and wondering how i was going to do this, where i was going to put everything, afford everything, .....and just remember everything. if you're at that point right now, just remember, i too was there, we were on a very tight budget, we have an extremely tiny house, no closets, a damp basement, a total wreck of a kitchen without kitchen counters, and i was scared, so if i can do this YOU can do this,
ok so we have a sample week of supper menus, and a list of other meals your family likes
plus an idea of how many weeks (2) you want to try and stock for.
now we do some math, first off you take the meals you know you will repeat ......so that would be say two meals of homemade pizza
and you are going to make a roast either of beef or chicken or even turkey, and cut that up for a stew, and the pot pie.
now you just have to fill in the others (fill in your own meals ok-i'm working on a pdf for you to download)

- stew and/or potpie
- chicken stir fry
- meatloaf
- pizza
- pizza
- pork chops
- pasta
- soup and sandwitch
- baked chicken
- tuna casserole
- tilapia fillets with parmesan coating

dehydrating 102- & pantry cooking- PHOTO heavy

today i am going to show you how to use some dried veggies in a meal.
i took pictures and posted them of the tortilla potpie bowls the other day (scroll down) if you would like to make a pot pie using tortillas (which we do as it's fast)...and that is a whole wheat tortilla in the photo.

for pot pies i use a mix of butter and olive oil for the fat.

then add about 1/8 cup of flour, you can use all purpose
whisk that together
i used beef stock in this, about 1-1/2 cups
finished sauce |
whisk it while heating until it gets thicker and smooth.
it should be lump free doing it this way
btw, this will also make gravy if you need to, the very same method, but use the pan drippings after you separate out the fats

added some fresh ground pepper, and a dash of paprika and garlic powder, a bit of tomato sauce i had in the fridge (you can use a cube you froze from something else)

i briefly softened another tortilla(not soft enough from the look of the photo) and put that on top, then into the oven at 350 for about 20 to 30 minutes. (i like the top a bit crispy)

it is pantry and leftover cooking at it's finest!....
now i like to keep a lot of whole wheat tortillas on hand for my new found love ....enchiladas!
which i make out of leftovers, and add chopped vegetables to.
so these tortilla pot pies are sort of an extension of that idea, and while the enchiladas freeze well, i've never tried to freeze these.
i know that the photos are not the best however this is a pretty good way to use up leftovers, or make overs.... i use leftover everything (including leftover gravy when i made the turkey leftover pot pie)

now i hope this helps you, because it does help to have another way to make leftovers, and to use pantry items.
by drying your own veggies and fruits, when are in season, you save a lot of money, and by keeping a pantry full of food, you know that in case of emergency you have a safety margin for yourself and your family.

where in we discuss dehydration of vegetables 101

as some of you folks may remember, i keep a very large pantry.
i try to make sure that we have enough of everything to last us, in case of emergencies
storms
power outages
shortages (remember the rice shortage?)
financial set backs
illness
i try to keep three methods of food storage.
frozen
canned
dried
my friend rho asked me to do a post about dehydrated foods....
so i am going to start talking about that today (which is thursday for you folks)
first off i want to tell you, drying food at home is not hard,
with some minimal care,
it lasts a very long time, properly stored,
and it's wonderful for emergencies.
or because you just can't bear to scrub, peel and slice the carrots for the stew tonight cause you are so very tired from working all day
first off there are plenty of books on this (we'll get to the book list in another post- if i forget, you remind me)
so we'll start with the real basics, the dehydrator
i have several (yes i know)
i have two excaliburs (one 9 tray and one 5) and an american harvest with something like 11 trays.
i like all of them
and sometimes ALL of them are in use at the same time!
some of the things i dry the most?
carrots
broccoli
sweet peppers
tomatoes
ONIONS (you haven't lived until you've eaten dried vidalia onions-dry them OUTSIDE-you will thank me for that one)
cabbage
herbs
oranges
lemons
limes
grapefruit
zucchini
eggplant
peaches
sliced mushrooms
asparagus
celery
(and occasionally potatoes but you have to really watch potatoes, they mold FAST)
so let's start with something very easy.
onions! in spite of the smell, and i am very very serious about drying them OUTSIDE of your living area, they will get to you if not........
onions are great to dry
i sliced them up in the food processor one year and it was even easier to do
i like them about 1/8 thick
spread them in one layer on the trays, and depending on weather, i start at about 5 hours, then flip them until they are almost crisp. these things are fantastic as a snack btw.
now mine changed color a bit but that was ok too
we also grind them for onion powder as we need them
when they are totally dry, i put them in mason jars with a 'dry can' seal i use a seal-a-meal jar sealer and a used but washed canning lid and ring
label (although onions are pretty obvious.....citrus not so much so)
i think 50 # of vidalia dried down to 4 quarts or maybe 5, i wasn't able to do them this year or last so i can't quite remember how many, but i know that i STILL have them on the shelf
keep them stored in a cool, dark, DRY place (in moist climates, either use them food grade 'stay dry' packs or maybe try the heat sealing mylar bags or both--)
i will tell you also that i hooked more people on drying food by letting them have some of my dried vidalia onions....they are like fantastic chips- seriously, they are better then onion flavored potato chips!
i basically dry citrus the same way, just sliced and dried......USE ORGANIC citrus if you are going to do that ok? and remember to label the jars...... next time lemons and limes are on sale.... pick them up and dry them
i dry these guys crisp, and i do use them often
the oranges in either blueberry orange compot or my cranberry orange sauce at the holidays
sometimes i grind up the citrus slices and throw that into cookie dough......
now some things need to be blanched briefly before drying, i usually blanch broccoli and then slice it thin and dry it- not so much things like peppers or tomatoes, or zucchinis etc.
i cut the veggies uniformly, and i try to cut them into pieces that are pretty easy to deal with, i like to dice peppers and eggplant
i slice carrots and zucchini into 1/8'' slices
i grow special tomatoes sometimes for sun drying but i dry them in the dehydrator (they sometimes turn very dark but that's ok, i don't use sulfur or anything to preserve color)

as some of you folks may remember, i keep a very large pantry.
i try to make sure that we have enough of everything to last us, in case of emergencies
storms
power outages
shortages (remember the rice shortage?)
financial set backs
illness
i try to keep three methods of food storage.
frozen
canned
dried
my friend rho asked me to do a post about dehydrated foods....
so i am going to start talking about that today (which is thursday for you folks)
first off i want to tell you, drying food at home is not hard,
with some minimal care,
it lasts a very long time, properly stored,
and it's wonderful for emergencies.
or because you just can't bear to scrub, peel and slice the carrots for the stew tonight cause you are so very tired from working all day
first off there are plenty of books on this (we'll get to the book list in another post- if i forget, you remind me)
so we'll start with the real basics, the dehydrator
i have several (yes i know)
i have two excaliburs (one 9 tray and one 5) and an american harvest with something like 11 trays.
i like all of them
and sometimes ALL of them are in use at the same time!
some of the things i dry the most?
carrots
broccoli
sweet peppers
tomatoes
ONIONS (you haven't lived until you've eaten dried vidalia onions-dry them OUTSIDE-you will thank me for that one)
cabbage
herbs
oranges
lemons
limes
grapefruit
zucchini
eggplant
peaches
sliced mushrooms
asparagus
celery
(and occasionally potatoes but you have to really watch potatoes, they mold FAST)
so let's start with something very easy.
onions! in spite of the smell, and i am very very serious about drying them OUTSIDE of your living area, they will get to you if not........
onions are great to dry
i sliced them up in the food processor one year and it was even easier to do
i like them about 1/8 thick
spread them in one layer on the trays, and depending on weather, i start at about 5 hours, then flip them until they are almost crisp. these things are fantastic as a snack btw.
now mine changed color a bit but that was ok too
we also grind them for onion powder as we need them
when they are totally dry, i put them in mason jars with a 'dry can' seal i use a seal-a-meal jar sealer and a used but washed canning lid and ring
label (although onions are pretty obvious.....citrus not so much so)
i think 50 # of vidalia dried down to 4 quarts or maybe 5, i wasn't able to do them this year or last so i can't quite remember how many, but i know that i STILL have them on the shelf
keep them stored in a cool, dark, DRY place (in moist climates, either use them food grade 'stay dry' packs or maybe try the heat sealing mylar bags or both--)
i will tell you also that i hooked more people on drying food by letting them have some of my dried vidalia onions....they are like fantastic chips- seriously, they are better then onion flavored potato chips!
i basically dry citrus the same way, just sliced and dried......USE ORGANIC citrus if you are going to do that ok? and remember to label the jars...... next time lemons and limes are on sale.... pick them up and dry them
i dry these guys crisp, and i do use them often
the oranges in either blueberry orange compot or my cranberry orange sauce at the holidays
sometimes i grind up the citrus slices and throw that into cookie dough......
now some things need to be blanched briefly before drying, i usually blanch broccoli and then slice it thin and dry it- not so much things like peppers or tomatoes, or zucchinis etc.
i cut the veggies uniformly, and i try to cut them into pieces that are pretty easy to deal with, i like to dice peppers and eggplant
i slice carrots and zucchini into 1/8'' slices
i grow special tomatoes sometimes for sun drying but i dry them in the dehydrator (they sometimes turn very dark but that's ok, i don't use sulfur or anything to preserve color)

a long and winding...........road
i am slowly finding my way i think,
i did three outlines (see yesterday's post) for the three main projects i am working on currently
and i wish i could grasp how to sort of put them all together if that is at all possible ....if not.... oh well.

i also have now gotten a better way to plan series.
i began to cut all the paper for the series first, so they are all the same size (and type, you would not believe the mess of different papers the bird series is on)
boy it really IS the journey huh?
i've decided first off.....better late then never, and also that when i start the series, the first thing i am going to do is pick and cut the paper!
(*** i put the catalog number of each paper on the back of the paper, and when i cut the paper i also make sure that the catalog number is on every single page back. then i keep a master list of the catalog numbers with the paper manufacturers name, the #, and the surface finish, inside the box of cut papers-now when i go to photograph these paintings, i will take a scrap of the paper it's painted on to set the white balance in the camera with- finally i figured that part out--- for now this feels like the right way to do it) oh and i long for a flat file..... or two, i am thinking now....20 drawers would be about right...to be added to as i continue to paint.
now today started out sunny but it fast became very overcast and threatening. we even brought the ducks in early as they looked miserable out there.
it's not really cold out but raw, so we've kept the woodstove going... i've used pieces of dried bark from time to time to heat it up a bit more then what the log is doing by itself.
it's sort of a lazy day around here.....in spite of my poor overloaded brain.
bernie keeps nodding off in his chair, the cats are laying around like furry little lumps, even the chickens seem subdued, the only ones that seem not to be affected by the day is the budgies.....they are screaming their fool heads off inside.
i want to thank everyone that came to visit me .....i hope you all come back soon.
i am slowly trying to tag the back posts so that recipes, and information on how to do stuff is easier to find, as well as some of the funny stories.
a few posts a day i am tagging with their contents, i am not sure how many i can tag per day but i am doing a few here and there
i spoke to a friend of mine today and read her the post about bernie's angel, i am sharing the link with you folks as it reminded me.... (i ended up crying as i read it to her..) really maybe we aren't alone, even during the darkest times? so since another one of my friends pointed out that this is the beginning of advent if you are a christian, i think putting the link to bernie's angel is ok.
now i am not a religious person at all, BUT, i do believe there is a higher power in the universe. however i definitely do not believe that only one religion has a handle on it- and i do believe in angels.. maybe not with the whole wing and halo thing though..... (the one dream i had about a winged being scared me shitless for MONTHS)
i also believe in miracles cause we've had them happen to us. anyway this seems appropriate for the current holiday season as well as some of what appears to be going on in my life---
i definitely have had a huge burst of creativity- it's like my brain is getting stuffed to overfill with creative ideas, so very many, and a part of me is trying to enjoy that, because i love when i get a bunch of wonderful interesting and irresistible ideas like that, and a part of me that can't quite see how to accomplish all i want to do yet (despite the project planning lists) throws my hands up and says to the universe, 'well if this is what i am supposed to do.... help me find my way'
somehow that seems to work........ not always fast, although there have been lighting fast responses that i have no choice but to classify as miracles

you can now add your filling, and bake it in the oven. i usually add the filling pre-cooked and hot. you can moisten the edges with water/egg and add a softened tortilla on the top then bake at 350 until the top is crispy (it puffs up)
i'll have to make a start to finish for you on this.
you can make the filling with dried veggies and leftover meats in a homemade cream sauce....
if you want me to run through an whole post on this please let me know

GOOD morning! how was your holiday?
i hope everyone had a wonderful day.
we had a very quiet day.
we won't discuss HOW stuffing ended up on my head......
(except to say it was my own stupidity--)
we have hot water again so i was able to take a shower....YEAH!!
i really didn't want to walk around smelling like sage and turkey, (cause no matter how hard you try a sponge bath doesn't really do it as i have discovered) i had visions of every stray carnivore in 15 miles following me around.
i will admit to being lazy about our meal prior to yesterday. we'd had mashed potatoes earlier in the week so we had saved them for yesterday. we roasted sweet potatoes instead of that casserole with the marshmallows and i threw the cranberries in a pot to make sauce as i was letting the turkey rest.

here is a very fast way of making home made cranberry sauce.
i don't really measure things so i am going to give you an approximation
1 bag of fresh cranberries, usually about 12-16 oz
1 cup sugar
1 cup apple cider, or apple juice, OR orange juice
1 whole organic orange or tangerine (you're going to zest the colored part of the peel into this
3 spokes off a star anise
zest the citrus fruit into the pan, and if you didn't use orange juice as the liquid, then squeeze the juice out of the citrus fruit into the pan.
then dump all the rest into a sauce pan and bring it to a boil, stirring occasionally.....i gently boil it until things sort start to pop and the liquid is nice a red.
it will start coating the spoon....
that's it .....it is pretty much done. fish out the star anise and toss that into the compost.
chill it, and there you have it
if you want to can it, i put it in either the small (see the picture-i even made it sorta pretty for you all) 4oz jars or the 8oz jelly jars.
i use a boiling water bath canner and it's 10 minutes time.
now you can also at that point chop some apple into it
and or add some chopped nuts
one of my friends chops bananas into his.
this is fun so experiment a bit.
i was snacking on this sauce last night long after supper.
a fast note on this, i put it in the small 4oz canning jars for serving, cause it looked so cute in there, and it was just about the right amount per person (if you love cran sauce like i do)
ok, now in my painting news, i am still working on photographing my work, having discovered that thought i THOUGHT i was doing the custom white balance correctly, it turns out i wasn't! (remember the polar bear painting from the other day where i showed you what a difference a good crop makes?)
so since i discovered that youtube video on my camera's white balance i realized i needed to reshoot almost all the paintings again.
guess what i am doing today? and tomorrow most likely, and well......i guess every day until i get them all done.
i am working hard on getting them ready to offer the prints in the etsy store i in the middle of working on.
i've also started writing the stories behind how each series started, and what i was going through while painting them, which will go on the listings and also be printed and enclosed with the digital prints.
i am also beginning to plan a kickstarter for valentines day or spring/easter
so if anyone wants to give me some feedback on what they would like to see my images on....... that will become part of the set up. and yes i will blog about it
i personally would LOVE to offer garden flags, i don't know why i want to see my work on them so much, maybe because i have a few and really do like them.
i will be submitting to toland flag in a few weeks hoping to become one of their artists, but i am also going to inquire about having them do a run of a custom flag for me to maybe offer on etsy.
i will tell you folks, any imput any one of you may have for me would be invaluable.

now december of 2014 marks the 10 year anniversary of this blog. yes it's true, i been blowing hot air for ten whole years on this blog! amazing huh?

so now, i am going to finish this cup of coffee, and get started on my list of chores

shhhhhh it's really friday night
you however, will read this saturday morning.....
i won't tell if you won't....ok?
i been icing and using the rice sock all damn day *** two cups of rice in a clean white cotton crew sock heated in the micro about a minute or so***
i can't straighten out my left arm
if this keeps up i am going to be at the ortho...... and what do i tell him?
i moved too much wood?
i knit too much?
hauled too many buckets of water? (remember when i had to tell the chiro 'i was wrestling with edmund my wether, and pulled out my back.......he wasn't too happy)
he can't give me cortisone cause of the 11B so what is he going to do that i'm not already doing?
PT? oh man...not another run of THAT
this was a pretty bad week, first with that plague that apparently everyone else in town has, and my arm.
but on the up side....my seedlings are all up
the rain is washing the snow away...
drought conditions should not exhist
it's warmer and i can sleep in
i'm over the plague if not the arm
so mainly it's a good thing
bernie just called (remember it really is friday night) he's on his way home as he's worried that i will over use this arm trying to get supper on.
he knows i hauled water buckets for the animals today (used my other arm)
he also knows i may try to get supper on as i did do the meat part last night
*** i did a to die for oven pot roast, powdered celery, sweet peppers, onions and garlic in water, in a small enameled cast iron cocotte covered.....in the oven at 250. made it's own gravy and it was wonderful---maybe i shouldn't have lifted the cast iron pots?---- oh and remind me to tell you all about the dried veggie powders i find myself making and using more and more as seasonings i need to do a post about that, you guys will love it***
it's warm out, i am so very tempted to put some spinach, mache, and lettuce seeds out in the deck planters. i will hold off on the snow peas and the garden peas, as the main garden is STILL covered with snow. but boy i wish my snow peas were up......i love the first flush of them steamed on salads during early spring...don't you all love those first spring salads from your gardens?
in budgie news, captain cuttle is out numbered as you all may recall- while he is mainly interested in his beloved emma, the other two girls are pestering him to feed them.
mrs fezziwig yells at him a lot (she's doing that right now) and i think mrs fezziwig needs a MR fezziwig......just as estella needs her pip. soooooooooooooooo as soon as heating is over
we get two male babie budgies, they'll have to stay in quarantine like the easter budgies did but that's ok.... then that will be it for budgie-dom (although a larger flight would be nice i think... like a walk in flight???)
this morning in the slushy snow i saw some interesting tracks..... unfortunately they are sniffing around the duck pens and the cellar door.
i saw fisher tracks, fox, raccoon, and domestic cat......
the fisher has me seriously worried though, and i don't think i can poison it.
so i may have to see if a trapper is interested,.......it's late though in the season, possibly too warm for a trapper to really want it.
i also saw bobcat, further back though
no skunk yet, (jen's smelled them so they're out now) but i also imagine the bear is out too
i think we are going to need some hot fencing soon
the baby ducks are laying daily, lilli no, phoebe possibly but she's hiding the eggs.
i am pretty sure that the hens haven't started up yet........which is ok right now, even though we can use chicken eggs. i am not seeing egglaying behavior in the chickens. colette follows me around as usual but isn't crouching, neither are the other sussex crosses......... and of course henrietta and dulcette are 5000 year old chickens, so when they lay, they are totally confused by it.
i intend to start up baking again as soon as i'm able, i have a largish stash of duck eggs waiting
we are also anxiously waiting for if not actually warm weather......at least no snow cover or ice....... everyone wants to get out and scratch in the dirt
i need the ducks to de-slug the garden
and the chickens to go after what i am sure is lurking in the squash beds......they can't do that with snow on the beds.
well everyone, i hope your garden planning and seed starting is coming along

i also am planning increasing my pickling........one of my favorite nephews eats me out of pickles as soon as he knows i made them
(he'd better help plant cuc's this year......i keep telling him he's also going to learn to pickle....but he tells me he'll be in afganistan, and won't be able to get home......hmmmmm, i told him that at the rate he EATS pickles......that is NOT an excuse- he laughs at me, and of course i give him another jar of pickles--- he'd better bring my jars back... he's got some of my fancy jars)

i know we have errands planned..... hopefully no more trees will come down in these winds
i hope you folks over in new zealand aren't getting any more quakes or tremors- i went to cnn and also to msnbc and watched clips from your earthquake...it is a nightmare for you all
some of the pictures reminded me of 9-11
